German Pfannkuchen (Thin Pancakes)

A Back-to-School Favorite

As the kids head back to school, I always find myself craving those simple, comforting recipes I grew up with, and this one is straight from my childhood in Germany.

Pfannkuchen are thin, crepe-like pancakes that can be filled, rolled, or folded with anything from jam to apples to Nutella. In German households, they’re often served as a sweet lunch, a weekend breakfast, or even a “quick dinner” on busy school nights.

They’re easy to make, totally customizable, and fun for little hands to help with.

ingredients

Makes about 6-8 pancakes

  • 1 cup (125g) all-purpose flour
  • 2 eggs
  • 1 cup (240ml) milk
  • 1/4 tsp salt
  • 1 tsp sugar (optional for sweet version)
  • 1–2 tsp melted butter or neutral oil for the pan

instructions

  1. In a bowl, whisk together flour, eggs, milk, salt, and sugar (if using) until smooth. Let the batter rest for 10–15 minutes (optional but helps the texture).
  2. Heat a non-stick skillet or crepe pan over medium heat and brush lightly with butter or oil.
  3. Pour a ladle of batter into the pan, tilting to spread it evenly.
  4. Cook for about 1–2 minutes, until the edges lift and the bottom is golden. Flip and cook the other side for 30–60 seconds.
  5. Stack on a plate and keep warm while you cook the rest.

Serving Ideas:

  • Classic: Spread with jam or fruit preserves and roll up
  • Kid-favorite: Nutella + sliced bananas
  • Autumn twist: Warm cinnamon apples
  • Savory version: Add herbs to the batter and fill with ham & cheese

Let them cool, roll them up with jam or cream cheese, and pack in a lunchbox with fruit and a small treat, they’re just as delicious as they are cold!
