Germany’s answer to mac & cheese, Käsespätzle is rich, comforting, and easy to make with pantry staples. Serve it as a main with a green salad or as a side to sausages or schnitzel.

Prep Time: 20 minutes

Cook Time: 30 minutes

ingredients

For the Spätzle Dough:

  • 2 cups all-purpose flour
  • 4 large eggs
  • ½ tsp salt
  • ¼ cup milk (more as needed)

For the Cheese & Onion Topping:

  • 1½ cups grated Emmental or Gruyère cheese (or a mix)
  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • Optional: chopped parsley or chives for garnish

Make the Spätzle Dough

  1. In a mixing bowl, whisk together flour and salt.
  2. Add eggs and beat until combined.
  3. Add milk gradually until the batter is smooth and thick—slightly elastic but still drips slowly from a spoon.
  4. Let rest for 10–15 minutes.

Cook the Onions

  1. In a skillet, melt butter over medium heat.
  2. Add onions and cook slowly until golden brown and caramelized (about 15–20 minutes). Set aside.

Boil the Spätzle

  1. Bring a large pot of salted water to a boil.
  2. Press batter through a spätzle maker or colander into the water.
  3. When the noodles float to the top (1–2 min), scoop them out with a slotted spoon and transfer to a bowl.

Layer with Cheese

  1. In an oven-safe dish, layer hot spätzle with grated cheese.
  2. Add caramelized onions on top.
  3. Broil for 3–5 minutes or bake at 375°F (190°C) for 10 minutes until bubbly and golden.

Tips

  • Don’t have a spätzle maker? Use a large-holed colander or cheese grater.
  • Add a splash of cream or butter to the noodles for extra richness.
  • Serve with a crisp green salad and mustardy vinaigrette to cut the richness.
